Most of the honey we bottle is raw and without application of heat or filters. Some of our customers like honey that does not crystallize and is clear.
This honey is warmed to 75 degrees in a water jacketed bottler in order for the honey to pass thru stainless steel filters to remove, pollen, proprolis, wax and the occasional bee wing. The good stuff in honey is destroyed when honey is heated to 104-110 degrees.
This honey will not crystallize for at least a year. If the honey does crystallize, place the jar with the cap off in warm water and the crystals will dissolve. |
